Ball Ground, Ga. (Feb 2, 2017) – Foodmate US has developed a Kneecap Separator (KCS) for its OPTI Thigh Deboner as a solution for extra labor that is normally needed in the deboning process.
During thigh deboning, cartilage can sometimes be left on the meat during deboning. The Foodmate Kneecap Separator (KCS) provides a cartilage free product which results in less manual trimming. As a result, the meat has a hand-cut appearance with less labor required.
“Our customers frequently relay to us that due to an increasingly tight labor market, it is harder and harder to staff the trim tables and control the performance of each individual trimmer. We feel that this new add-on will address these issues.”, Foodmate U.S. President Scott Hazenbroek said.
The Kneecap Separator (KCS), which is cam and gear operated, can be installed on existing machines or it can be integrated into a new OPTI Thigh Deboner. The meat scraper comes underneath the thigh bone to cut the tendons around the knee joint. After the tendons are cut, the meat scraper pulls the meat off the bone while leaving the kneecap attached to the bone. Adding the automated KCS does not impact meat quality and yields are very similar or sometimes even better than operations that manually trim.
